Mushroom Marinade

Ingredients

If marinating a big Costco container of button mushrooms, double the marinade ingredients listed below.

  • 4 large portobello mushrooms stems and gills removed, wiped clean
  • 1/4 cup balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon chopped fresh rosemary or 1/2 teaspoon dried
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper optional,
  • plus additional olive oil for grilling

Instructions

  • Grind spices together using a Mortal and Pestle
  • Mix wet & dry ingredients of marinade
  • Use a tea stirrer (or similar) to trace where the stem meets the cap to ensure that marinade can get into the cap.
  • Place mushrooms stem-up in a container and drizzle each with marinade, allowing excess to pool at the bottom of the container.
  • Let sit for an hour.
  • Grill stem-up until tinder
