Ingredients
If marinating a big Costco container of button mushrooms, double the marinade ingredients listed below.
- 4 large portobello mushrooms stems and gills removed, wiped clean
- 1/4 cup balsamic vinegar
- 1 tablespoon extra virgin olive oil
- 1 tablespoon low sodium soy sauce
- 1 tablespoon chopped fresh rosemary or 1/2 teaspoon dried
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/8 teaspoon cayenne pepper optional,
- plus additional olive oil for grilling
Instructions
- Grind spices together using a Mortal and Pestle
- Mix wet & dry ingredients of marinade
- Use a tea stirrer (or similar) to trace where the stem meets the cap to ensure that marinade can get into the cap.
- Place mushrooms stem-up in a container and drizzle each with marinade, allowing excess to pool at the bottom of the container.
- Let sit for an hour.
- Grill stem-up until tinder
