Pie Crust

Ingredients:

  • 2 cups flour
  • 3/4 cup shortening
  • 1 teaspoon salt
  • 1/2 cup water

Preparation:

Put 1/2 cup water and the shortening in the freezer until ice just starts forming around the edge of your water. If you keep the shortening in the fridge to begin with you can skip putting that part in the freezer. Mix flour and salt in mixing bowl, then add shortening and use fork to slice thin pieces off into the flour. Once shortening has been completely sliced, work the shortening and flour together with your hands. You want the shortening to be evenly distributed little bits mixed into the flour. Add the water and combine with your hands. Avoid over-working the dough, try to combine in as much flour into the wet parts at once as possible.

Makes enough for 2 9-inch pies without a top, or a top and a bottom for a single covered 9-inch pie.
