Ingredients:
- 3 eggs (room temp)
- 1 1/2 cups milk (room temp)
- 1 1/2 cups all-purpose flour
- 1 1/4 teaspoons salt
- Spray oil
Preparation:
You can do these in a normal muffin pan, but a popover pan is much better. Place empty pan in oven and preheat the oven and pan at 450. When the oven has heated up, put the eggs and milk into a bowl and whisk for about a minute until frothy. Then add the flour and salt and mix lightly together; you don’t want to over mix it after adding the dry ingredients, you’ll lose froth from the initial mixing. Now take out the hot popover pan and spray down each cup with oil. Fill each cup roughly 3/4 full, and place the pan back in the oven. Bake for 20 minutes, then reduce heat to 350 and bake for another 20 minutes.
You can eat the popovers plain, with butter or jam, or you can take advantage of the empty air pocket in the middle and fill them up with something. They’re a really simple flavor, so you can go sweet or savory on a filling. We’ve done ones filled with whipped cream and diced fruit, which works great. They’d also be good filled with something like Spinach Bowl or Taco Filling.
If you want to fill them, you’ll really want an actual popover pan, if you do them in a muffin tin the pocket isn’t very large.
