Ingredients
- 8 Cups Veggie Broth
- 1 Bag Daring Chicken
- 2 Poblano Chili’s
- 1 Onion
- 3 Cloves Garlic
- 1 Large Tomato
- 1 Jalapeno
- 1 Bunch Cilantro
- 1/2 Fresh Lime
- 10oz fresh corn (or thawed frozen)
- 10oz black beans
- 3 Tbsp chili powder
- 2.5 Tbsp cumin
Instructions
- Roast, peel and dice poblano chilies.
- Dice & saute onion, garlic, jalapeƱo and spices.
- Add broth.
- Char thawed corn on a dry cast iron skillet until lightly blackened and add to soup.
- Saute Daring chicken in a separate pan, chop & add to soup.
- Add chopped tomato, cilantro and lime juice.
